To marinate with marinade, or not
A couple days ago there was a string on marinating.First to clarify the language. To marinate is the verb used for the action andmarinade is the solution used for the deed.The very best way to marinate is with the vacuum sealer machines which are sopopular now. It only requires a small amount of marinade as the air displacedforces all of the solution onto the meat. In fact, if you use too much themachine will suck it out of the bag.
I have found that never putting anything that will burn on meat before grillingis good advise, especially sugar based sauces. Many of the sauces we use areladen with sugar. It is good to read the ingredients list. The same is true forsalt as it draws the moisture from the meat.
Having had the pleasure of eating BBQ prepared with pepper and vinegar orlemon/lime juice only while cooking I thoroughly enjoyed it, It is amazing howmuch sweet, natural, rich flavor is brought out in the meat by the acid in thesemarinades. Some flavorings are enhanced by extremeheat while others do not. YMMV.
Try the vacuum machine method, I think you will be pleased.
